Clean eating goes back to our grandparents time: think about what yourparents ate. They often eat fresh from their gardens, organic, no preservatives or added chemicals …. eating foods that are as close to their natural states as possible. I remember my grandmother making custard with snow! Examples of clean foods include fresh fruits and vegetables, whole grain bread, lentils, avocados, egg whites, salmon, nuts, good fats such as olive oil, and boneless, skinless chicken breasts. Examples of food to avoid are processed foods such as white bread, soda, processed chips & crackers. The benefits to clean eating are reasonable, including improved energy, reduced body fat, reduced risk of heart disease, stroke, diabetes & certain cancers along with less consumption of pesticides and artificial flavors. Who would not want those benefits?
The clean eating trend has returned with a vengeance; and is hopefully a healthy trend that is here to stay. Not only will it keep your family healthy, it is also great for the environment! Eating clean is also eating green: they are not processed and consume much less energy as well as create less waste than packaged foods. An eating clean diet is also a sustainable way of life that is easy to maintain as a life long habit.
How does a family begin eating clean? A simple solution is to shop on the outside perimeter of the grocery store, where clean foods are most likely to be – the produce section, the dairy section and the meat section. Check out your local farmer's market and buy in season fruits and vegetables. Look up recipes for your purchases on the internet. This is a fun way to explore new healthy foods as a family.
Some examples of family friendly clean eating recipes are:
Portobello Mushroom Stroganoff
Ingredients
12 oz. whole wheat egg noodles
Olive oil cooking spray
8 oz baby bella portobello mushrooms
1 medium Vidalia onion
1 clove minced garlic
12 oz diced tofu or soy meat
8 oz low fat sour cream
8 oz low sodium chicken stock or vegetable stock
1 tablespoon tomato paste, unsalted
1 tsp sea salt; 1 tsp black pepper; 1 tsp Cajun seasoning; 1 tsp dried dill
Instructions
1. Cook noodles according to package instructions and set aside.
2. Spray a nonstick pan with cooking spray. Saute the onions until caramelized. Add the mushrooms and garlic. Cook about 8 minutes.
3. Add remaining ingredients. Cook another five minutes.
4. Pour mushroom sauce over cooked noodles.
5. Enjoy!
Strawberry and Banana Popsicles
Ingredients
2 cups strawberries
2 bananas, ripe
1 tablespoon honey
1/2 cup pecans
1/4 cup water
Directions
1. Blend all ingredients in a blender until smooth and creamy.
2. Divide into 4 popsicle molds or divide into an ice cube tray for smaller trees.
3. Freeze and enjoy!
